Whether or not you are setting out a large Cinco de Mayo buffet, you can check out my recipes for a fun feast. My cinnamon pecans, tomato salsa, and chile con queso are great for appetizers. Serve the cinnamon pecans with beer or sangria, and the salsa and chile con queso with tortilla chips. My tropical mango and avocado salad and festive chicken taco salad will meet your salad needs. Chicken and spinach enchiladas, spinach and mushroom quesadillas, and Tex-Mex tortilla pizza can star as hot main courses. Heartier white chicken chili can sit in a crock pot all evening. Smoky chipotle chicken can be kept warm for a make-your-own tacos and tostadas bar.
