Cinnamon Pecans are a tasty addition to a salad, such as my Pretty Pear Salad. They taste great served as an hors d’oeuvre with drinks prior to dinner.

Cinnamon Pecans
Ingredients:
1 c whole shelled pecans
1 T unsalted butter
1 1/2 T sugar
1 t cinnamon
Waxed paper
Method:
Combine the sugar and cinnamon in a small bowl. Melt the butter in a shallow pan. Add the pecans to the butter and mix well to coat them in the pan. Remove the buttered pecans from the pan and add to the cinnamon sugar mixture in the bowl. Mix well to combine so that the cinnamon sugar coats the pecans. Pour the pecans onto a piece of waxed paper and separate so the pecans don’t stick to each other. Set aside until ready to use.
You’re seeking a dry-coated pecan, not necessarily a caramelized one. The pecans will keep in the refrigerator for a few days if you wish to make them ahead. Also, they are a great snack. (Or you can bypass this step by purchasing pre-made cinnamon sugar pecans at your local grocery or gourmet store. Whole Foods Market carries them around the holidays in their pre-packaged nut section.)
Variations: If you are serving these cinnamon pecans as an hors d’oeuvre, you can add 1/4 teaspoon cumin and 1/4 teaspoon cardamom for a different flavor. A dash of cayenne pepper or ancho chile powder adds a kick.
