Sometimes a recipe is just so easy, you’ll want to make it all of the time. My Mini-toasts with Roast Beef, Horseradish Sauce, Grape Tomato Slices and Chopped Chives are simple to make for a quick and filling party appetizer.
I first made these mini-toasts as an appetizer for dinner with a few friends. The pre-made mini-toasts were purchased at Whole Foods Markets. You could use your favorite crackers or thinly sliced toasted baguettes instead.
Just put a small dollop of horseradish sauce on the mini-toasts. You can make your own horseradish cream, or buy a pre-made version. I’m a big fan of Ducktrap River’s Horseradish Sauce. You can use fresh horseradish or a bottled version. You could also use an herbed cheese such as Boursin instead of the horseradish sauce.
We had some leftover thinly sliced medium rare roast beef from the deli that I cut into thin strips and rolled up. Top the horseradish sauce on each mini-toast with a roast beef roll up.
Add another dollop of horseradish sauce over the roast beef roll up, and top with a slice of grape tomato. Sprinkle chopped fresh chives over the mini-toast. And, voila, you have a wonderful bite-sized appetizer.
The recipe makes 12 appetizers but I had to sample two of them prior to our party — that’s why the photo shows only 10 appetizers. Enjoy yours!

Mini-toasts with Roast Beef, Horseradish Sauce, Grape Tomato Slices and Chopped Chives
Ingredients:
12 mini-toasts
3 thin slices medium rare roast beef, cut into four strips each, and rolled up
3 T horseradish sauce
4 grape tomatoes, ends removed, and cut into three round slices each
1 T chopped fresh chives
Method:
1. Dab a dollop of horseradish sauce on each mini-toast.
2. Roll up each roast beef strip and place one on each mini-toast on top of the horseradish sauce.
3. Place another dollop of horseradish sauce on the roast beef roll ups.
4. Top with a slice of grape tomato.
5. Sprinkle with chopped chives.
6. Can be made a few hours ahead of time and kept covered in the refrigerator.
Makes 12 bite-sized appetizers. Double, triple, or quadruple the recipe for as many appetizers as you need!
Variations: Substitute sliced turkey for the roast beef. Swap out the horseradish for an herbed goat cheese or Boursin instead. Top with shaved red onion instead of the chives.
