Mini-Toasts with Roast Beef, Brie and Onion Jam. For my first posting of 2016, I’d like to offer a celebratory party “nibble” recipe to welcome the new year! My mini-toasts with roast beef, brie, and onion jam are simple to make. This recipe is a variation of my Mini-Toasts with Roast Beef, Horseradish Sauce, Grape Tomato Slices and Chopped Chives. Serve either or both!
Easy to assemble, just put a dab of mayo on a mini-toast, roll some sliced roast beef around a chunk of brie, top with some onion jam, garnish with a bit of tomato and some minced chives. Serve these bite-sized mini-toasts as a passed appetizer or set them out as part of a buffet. Festive and tasty!
You can use any brand of brie cheese for this appetizer. I like the Alouette brand.
My favorite onion jam is by Robert Rothschild Farm. Their Caramelized Onion Balsamic Spread has a nice spicy kick to it.

Mini-Toasts with Roast Beef, Brie, and Onion Jam
Ingredients:
24 Mini Toasts or crackers
3 T mayonnaise or Just Mayo
4 oz cooked roast beef, thinly sliced, then sliced again into thin strips
4 oz brie, sliced into 1 inch by 1 inch pieces
3 T onion jam (I like Robert Rothschild Farm Caramelized Onion Balsamic Spread)
4 grape tomatoes, sliced and then quartered
1 T minced fresh chives
Method:
1. Put a dab of mayo or Just Mayo on a mini-toast.
2. Roll a strip of roast beef around a piece of brie.
3. Place the roast beef brie morsel on the mini-toast.
4. Top the roast beef with a dab of onion jam.
5. Top the onion jam with a quarter of a tomato slice.
6. Garnish with a sprinkling of chives.
7. Repeat with the rest of the mini-toasts. arrange on a platter and serve!
Makes 24 mini-toast appetizers. Set out on plates or pass amongst your guests. Keep chilled if you make more than you’re serving right away. Offer these mini-toasts with sparkling wine, port wine, dry red wine, or beer.
Variations: Swap out the brie for another favorite cheese. Substitute Dijon mustard for the onion jam. Use red bell pepper instead of tomato. Use soft butter instead of the mayonnaise.
