Easy Pepperoni Flatbread Pizza. When you’re in a hurry, what’s quicker and more satisfying than a tasty flatbread pizza? This flatbread pizza starts with a garlic-flavored flatbread. Brush the flatbread with a little olive oil, add some pizza sauce, mozzarella cheese, and thinly sliced pepperoni and my Easy Pepperoni Flatbread Pizza comes together quickly for a weeknight meal in minutes.
You can make your own flatbreads or buy them at any grocery store. Flatbreads are widely available in many different flavors, shapes and sizes. I like to use a garlic or herb flavored flatbread yet plain works just as well.
Brush the flatbreads with a little bit of olive oil. Use your favorite pizza sauce or my favorite Roasted Tomato Sauce as the base. Sometimes I will sprinkle shredded mozzarella and Parmesan cheeses on the crust before I spread on the sauce. Then, cover the sauce and cheeses with the slices of pepperoni.
Bake the topped flatbreads on a baking sheet for 5 – 8 minutes at 400 degrees Fahrenheit. Remove from the oven when the cheese is melty and bubbling. Cut the flatbreads into pieces or serve whole. Garnish with the chopped basil or parsley. Serve with a side Caesar salad.

Pepperoni Flatbread Pizza
Ingredients:
4 garlic-flavored flatbreads
2 c Roasted Tomato Sauce or your favorite pizza sauce
2 c shredded mozzarella cheese
1/2 c shredded Parmesan cheese
1/2 lb thinly sliced pepperoni
2 T chopped parsley or basil for garnish
Method:
1. Preheat oven to 400 degrees Fahrenheit.
2. Arrange the flatbreads on a baking sheet.
3. Spread some sauce on each of the flatbreads.
4. Divide the cheeses and pepperoni slices amongst the flatbreads.
5. Bake in the oven for 5 – 8 minutes until the cheese is bubbling.
6. Remove from the oven, garnish with the parsley or basil, and serve!
Makes 4 flatbread pizzas. Serve with a Tomato and Cucumber Salad with Peppered Goat Cheese or a Caesar Salad.
Variations: Add some sliced mushrooms, tomato, bell pepper, onion or black olives. Use any flavor flatbread that you like. Try focaccia instead of flatbread for the crust.
