Truffled Foie Gras Mousse Stuffed Dates. That recipe title sure is a mouthful! These truffled foie-gras mousse stuffed dates are an elegant and tasty mouthful, too. Very easy to make, this is a quick appetizer for those “drop-in” friends if you can keep the ingredients on hand.
You can buy dates pretty much anywhere these days. I like to buy the Medjool dates as they are large and sweet and easily available. Dozens of cultivars of dates are grown around the world. Any large-sized dates will work in my Truffled Foie Gras Mousse Stuffed Dates recipe.
I like to use D’Artagnan’s Medallion of Duck Foie Gras with Black Truffles for this recipe. This foie gras medallion is not really a “mousse” per se but when it softens a bit, it’s very rich and spreadable. This is not an inexpensive recipe but so tasty and worth the treat once in a while.
How to prepare these super simple and decadent appetizers? Considering D’Artagnan has done most of the work here, you’re pretty much off the hook. You’ll need 10 dates and a package of the D’Artagnan medallion of duck foie gras with black truffles. Just halve the dates lengthwise, remove the date pits, and fill the date centers with the soft truffled foie gras mousse. Place the dates on a serving platter and serve. How easy is that?

Truffled Foie Gras Mousse Stuffed Dates
Ingredients:
1 (6 oz) package D’Artagnan Medallion of Duck Foie Gras with Black Truffles
10 dates, halved lengthwise and pitted
Method:
1. Using a knife or spreader, fill the center of each date half with the truffled foie gras.
2. Place on a serving platter.
3. And serve!
Makes 20 appetizers. Serve with a glass of Sauternes or Port wine. These stuffed dates also go well with scotch.
Variations: You could stuff dried apricots, dried prunes or even dried figs with the foie gras mousse. Add some chopped toasted pistachios on top.
