Welcome to my 100th posting on A Food Lover’s Delight! Since this is a special milestone posting, I wanted to write about one of my favorite foods — TOMATOES! So what to do with your bountiful summer tomato harvest? Help me celebrate this 100th posting by trying some of my Tomato Recipes!
As an appetizer, try my fresh Tomato Salsa with some tortilla chips. Throw some tomatoes in a food processor with some cilantro, onion, bell pepper and other salsa flavors. Couldn’t be easier!
For those tomatoes that might not be “perfect” or are slightly past their prime, you can roast them, puree them, and freeze them for a rich summery taste in the winter! My Oven Roasted Tomatoes can be made with any type of tomato. Cherry tomatoes, grape tomatoes, pear tomatoes, and regular salad tomatoes are easy to roast!
My Oven Roasted Tomatoes flow directly into my Roasted Tomato Sauce. Make a big batch and save some for the freezer.
Tomato Basil Soup is a favorite dish. You can serve this warmed soup alongside a salad or sandwich, or offer as a soup course for dinner. For those hot summer evenings, this soup tastes great when chilled, too!
Another wonderful way to use my Roasted Tomatoes is to top a pizza: My Rustic Roasted Tomato and Asparagus Pizza is the bomb!
Now for my salad options! Everyone’s favorite tomato and mozzarella salad — Insalata Caprese — pulls in that wonderful fresh basil with some extra virgin olive oil and a splash of balsamic vinegar for a super fresh summer dish.
A wonderful fresh tomato salad which includes that bounty of cucumbers is my Tomato and Cucumber Salad with Peppered Goat Cheese. You can use bleu cheese or feta crumbles if you prefer.
For a super simple summer salad, just slice some big beefsteak or heirloom tomatoes and slather with my Favorite Bleu Cheese Dressing or my Low Fat Bleu Cheese Dressing!
To me, there’s nothing better than a salad of sliced tomatoes — just plain or drizzled with a little olive oil and some sea salt sprinkled on them. Summer heaven!
For a tasty summer sandwich that only requires a little grilling on a hot summer day, try my Grilled Cheddar and Heirloom Tomato Sandwich. Add some basil leaves for an herby flavor.
Add some fresh tomato slices to my Individual Vegetable Lasagnas. Tomato slices work well in these little lasagnas with that zucchini and other squash that is piling up on your kitchen counter! Use my Roasted Tomato Sauce, too!
Another pasta dish that tastes very fresh — my Pasta Primavera — is loaded with summer vegetables including tomato!
My Pizza Pasta Salad is a family-friendly way to use diced fresh tomatoes or halved grape or cherry tomatoes in a buffet-style picnic main dish or a side dish at home.
