Target’s Archer Farms brand makes a very good strawberry basil balsamic vinegar. I came up with this recipe which is a bit sweeter than the usual balsamic dressing. My Strawberry Basil Balsamic Dressing pairs wonderfully with mixed greens topped with strawberries or beets and goat cheese or blue cheese crumbles. Try your favorites. And add some chopped nuts for an unexpected crunch!
From the kitchen of A Food Lover’s Delight….
Strawberry Basil Balsamic Dressing
1/4 c Archer Farms strawberry basil balsamic vinegar (or use regular balsamic vinegar)
Juice of half a lemon
1 T dijon mustard
1 t sugar or honey
1 c canola oil
1 T chopped fresh basil (optional)
salt and pepper
Whisk all ingredients together in a non-metallic bowl. Store up to a week in the refrigerator.
Makes about one cup of dressing. If you can’t find strawberry balsamic vinegar, just use regular balsamic vinegar or try fig-infused balsamic vinegar.
