Strawberry Basil Balsamic Dressing. Target’s Archer Farms brand makes a very good strawberry basil balsamic vinegar. I came up with this recipe which is a bit sweeter than the usual balsamic dressing. My Strawberry Basil Balsamic Dressing pairs wonderfully with mixed greens topped with strawberries or beets and goat cheese or blue cheese crumbles. Try your favorites. And add some chopped nuts for an unexpected crunch!
Serve this dressing on my Roasted Beet Salad with Goat Cheese and Pine Nuts or my Strawberry Almond Goat Cheese Salad!

Strawberry Basil Balsamic Dressing
Ingredients:
1/4 c Archer Farms strawberry basil balsamic vinegar (or use regular balsamic vinegar)
Juice of half a lemon
1 T dijon mustard
1 t sugar or honey
1 c vegetable oil
1 T chopped fresh basil (optional)
salt and pepper
Method:
Whisk all ingredients together in a non-metallic bowl. Store up to a week in the refrigerator.
Makes about one cup of dressing. If you can’t find strawberry balsamic vinegar, just use regular balsamic vinegar or try fig-infused balsamic vinegar.
