
My Honey Mustard Chicken Salad Sandwich is a slight variation of my favorite Chicken Salad Sandwich. It’s a simple way to use leftover roasted or cooked chicken. In this recipe, I use diced cooked or roasted chicken, a sliced celery stalk, grainy mustard, and some honey. Sometimes, I will add chopped pecans or walnuts.

My favorite way to serve this chicken salad sandwich is on a croissant. Since my husband and I have been watching our food intake for the past few years, we don’t eat a lot of croissants anymore. My second favorite way to enjoy this sandwich is by using two pieces of whole grain bread.

Maille grainy mustard is my choice for this chicken salad. You can use regular Dijon mustard or another grainy mustard. If you are a mustard fanatic, check out Maille’s whole line of very intriguing flavored mustards.

If you’re not a sandwich eater, this sandwich filling makes a great salad on a bed of fresh greens. It’s also good just by itself eaten directly out of a bowl. Serve at an elegant luncheon or take for a quick work lunch.

Honey Mustard Chicken Salad Sandwich
Ingredients:
2 c cooked or grilled chicken, diced
1 celery stalk, sliced thinly
1/2 c mayonnaise and more for spreading (I like Just Mayo)
2 T grainy country mustard (I use Maille)
1 T honey
salt and pepper, to taste
8 slices of bread or 4 sandwich buns
4 large leaves of lettuce or a large handful of baby arugula per sandwich
Method:
1. Combine diced chicken, celery, mayo, grainy mustard, and honey in a non-metallic bowl, stirring until the chicken and celery are coated with the dressing.
2. Season with salt and pepper.
3. Spread a bit of mayo on your bread slices or bun halves.
4. Add some lettuce or arugula to the bottom bread slice or bun half.
5. Mound the chicken salad onto the lettuce and top with another slice of bread or the roll top.
6. And serve!
Serves 4. Serve each sandwich whole or slice into halves or quarters. Offer with potato chips or carrot sticks on the side.
Variations: Use cubed turkey instead of chicken. Add some chopped nuts for a different flavor and additional crunch. Add a slice or two of ripe tomato or your favorite cheese. This honey mustard chicken salad sandwich filling is great on a bun, in a wrap, or on multigrain bread. It’s also great as a main course salad on top of a bed of salad greens.
