
Father’s Day is coming up soon. If your father is anything like mine, he’s done a lot for you in your life. He’s likely provided shelter during your earlier years and advice and guidance as you grew older. How to thank him? Most fathers like a good home-cooked meal made specially for them by their kids. Thank your Dad with a fabulous dinner that you can cook yourself! My Father’s Day Dinner Menu is sure to please!

My menu starts with Cinnamon Pecans which you can serve with or without a pre-dinner beverage. Elegant Smoked Salmon and Creme Fraiche on Endive Spears is a great appetizer that can be eaten by hand. The salad course, Insalata Caprese, marries tomatoes and fresh mozzarella balls with basil. My Dad’s own Chicken Napoleon, a sauteed chicken breast lapped with a wonderful tomato-shallot white wine sauce and served over rice, is the main course star. For dessert, surprise Dad with a super simple dish of Apricots with Fresh Ricotta and Mint. If Dad imbibes, a light red wine or a dry white wine would be a nice wine choice for this menu. Otherwise, serve Dad’s favorite beer, soda, iced tea, or whatever he wishes!

Father’s Day Dinner Menu
Setting the Table: Start out with a nice table setting with a pretty tablecloth to celebrate Father’s Day Dinner. Pull out that fancy china in honor of Dad. Light a pretty tall candle or some little votives. Use cloth napkins, if you have them, and nice flatware. Does Dad have a favorite flower? Place some small cuttings of ivy or other greenery with some favorite flowers in a few bud vases along the center of the table. Use your “fancy” wine glasses. It is all about the Celebration of Father’s Day!
If your family likes to relax with drinks before dinner, offer my Cinnamon Pecans along with favorite beverages.

As an appetizer, start with my Elegant Smoked Salmon and Creme Fraiche on Endive Spears. Elegant and satisfying, these endive “boats” will satiate cravings before dinner.

Insalata Caprese, a ripe tomato and mozzarella ball salad with fresh basil, is a satisfying and colorful salad course. You can also slice large beefsteak tomatoes and use the large mozzarella balls in slices for a different presentation.

My Dad’s Chicken Napoleon served over rice is a favorite hearty main course that your father will love! A skinless boneless chicken breast sauteed in garlic and then draped in a creamy tomato shallot sauce is the star in this dish.

For dessert, offer my favorite Apricots with Fresh Ricotta and Mint. Instead of using the ricotta filling, you can add a small scoop of vanilla ice cream or a dollop of whipped cream to the center of each apricot and drizzle with caramel or chocolate sauce instead of honey.

Offer this menu with red or white wine, beer, soda, iced tea, sparkling water or whatever beverages are Dad’s favorites!
