Fourth of July is coming up! My Patriotic Berry Parfait is a tribute to the colors of Independence Day as well as a great way to use the fresh ripe berries of summer!

In this parfait, you can use just one type of berry, or a mixture of several types of berries. I like to use strawberries and blueberries in my berry parfaits. If you grow your own berries, a parfait is a great way to use your harvest!

Crush some graham crackers or almond cookies to give the berry parfait some “crunch!”

You will also need some sweetened whipping cream: either use the simple style out of a pressurized can, or you can make your own. If you prefer a healthier alternative, use Greek-style yogurt in a vanilla or berry flavor.

Layer the berries, crushed graham crackers or almond cookies, and whipped cream or yogurt to make your parfait! Garnish with a whole berry on top!

From the kitchen of A Food Lover’s Delight….

Patriotic Berry Parfait

Ingredients:

4 parfait glasses
2 lbs fresh strawberries, rinsed, hulled, and sliced, 4 whole strawberries reserved for garnish
2 pints fresh blueberries, rinsed
2 c whipped cream or Greek-style vanilla yogurt
4 graham crackers or 12 almond cookies, crushed

Method:

In each of the four parfait glasses, layer the berries, the whipped cream or yogurt, and the crushed graham crackers or cookies. Repeat until you have used all of the ingredients. Garnish with a whole berry on top.

Serves 4 for dessert!

Variations: Use whatever types of berries (or other fruit) that you like. Omit the dairy and fill your glasses with more berries and some sweetener. Substitute chopped nuts for the graham crackers or cookies.
