Emerald green fresh spinach is sauteed with cooked orzo and lapped in butter and garlic. Use my sauteed garlicky spinach with buttered orzo as a base for grilled chicken or fish or serve it as a side dish. Add some sauteed mushrooms and tomatoes and you’ve got a nice vegetarian main course.

Sauteed Garlicky Spinach with Buttered Orzo
2 cups cooked orzo
3 T butter
1 clove garlic, minced
2 packages (5 oz. each) fresh spinach
1. Cook orzo according to directions on package.
2. When orzo is cooked, place butter and garlic in a chef’s pan over medium-low heat. Saute butter and garlic for 2 minutes.
3. Lower heat, add spinach and orzo, and stir.
4. Cover pan and cook for 4 minutes until ingredients are hot, butter is melted, and spinach is wilted.
Serves 4 as a side dish or a bed for Baked Salmon with a Creamy Mustard Sauce.
