
Easy Hummus Bowls. Most of us are looking for easy weeknight meals. My Easy Hummus Bowls can also double for work or school lunches. Also you could layer the ingredients in clear Mason jars for a pretty on-the-go meal.
So far, I’ve made all of these combos in the list below. The first one that I ever made was the Spiced Beef Cherry Tomato Hummus Bowl. Moroccan spices add zest to the ground beef. Crispy cucumber and fresh cherry tomatoes add a contrasting cool and crunchy feel to the dish.

My absolute favorite is my Balsamic Roasted Mushroom Hummus Bowl. I usually have some leftovers from my hummus bowls for lunch the next day. Having been refrigerated overnight which allows the flavors to meld, the leftovers are even better than the night before!

And next, I favor the Roasted Vegetable Hummus Bowl. This one has roasted butternut squash, broccoli, purple onion, mushrooms, and Brussels sprouts.

Easy Hummus Bowls
First of all, make a big batch of My Favorite Hummus. Spread some hummus in a bowl and then top it with any of these delectable combinations.
Spiced Beef Cherry Tomato Hummus Bowl: Top hummus with spiced ground beef (sauteed with onion, garlic, salt, cinnamon, and chili powder), halved or quartered cherry tomatoes, sliced mini cucumbers, sliced scallions. Garnish with finely chopped fresh mint leaves, toasted pine nuts, a dusting of paprika and a drizzle of olive oil.
Spicy Lamb Sweet Potato Hummus Bowl: Top hummus with ground lamb (sauteed with diced onion and seasoned with cinnamon, cumin, salt, and a pinch of cayenne), cubes of roasted sweet potato, dried cherries, and finely diced shallots. Garnish with a dollop of plain Greek yogurt, chopped walnuts, finely chopped cilantro and a drizzle of olive oil.
Vegetarian Hummus Bowl: Top hummus with diced tomato, diced cucumber, shredded carrot, sliced radish, and thinly sliced shallots. Garnish with a drizzle of balsamic syrup, a drizzle of olive oil, chopped walnuts, crumbled feta cheese, and finely chopped parsley.
Roasted Vegetable Hummus Bowl: Top hummus with roasted butternut squash cubes, roasted sweet potato cubes, roasted beet cubes, roasted onion quarters, roasted broccoli florets, roasted halved Brussels sprouts, and roasted bell pepper slices. Garnish with toasted pine nuts and a drizzle of olive oil.
Sweet Potato Beet Hummus Bowl: Top hummus with roasted cubed sweet potatoes, roasted cubed beets, diced apple, raisins, and thinly sliced celery. Garnish with finely chopped cilantro, grated fresh ginger, chopped toasted pistachios and a drizzle of olive oil.
Balsamic Roasted Mushroom Hummus Bowl: Top hummus with a mix of mushrooms, shallots and garlic (oven-roasted with a splash of balsamic vinegar). Garnish with a drizzle of balsamic vinegar syrup, toasted sliced almonds, toasted pine nuts, finely chopped parsley and a drizzle of olive oil.
Shrimp Hummus Bowl: Top hummus with shrimp (sauteed in olive oil and garlic and seasoned with smoked paprika). Add diced roasted bell pepper, roasted cherry tomatoes, sauteed sliced shallots, sliced mini-cucumbers, matchstick-cut raw carrots and thinly sliced celery. Garnish with finely chopped cilantro, toasted pine nuts, a squeeze of lemon juice, and a drizzle of olive oil.
Smoked Salmon Hummus Bowl: Top hummus with pieces of smoked salmon, capers, sliced mini-cucumbers, thinly sliced cantaloupe ribbons, minced shallots, and minced radishes. Garnish with a dollop of creme fraiche, chopped fresh dill and a drizzle of olive oil.
Thanksgiving Hummus Bowl: Top hummus with diced cooked turkey, cubed roasted sweet potatoes, sliced roasted mushrooms, chopped roasted shallots, and dried cranberries. Garnish with chopped pecans, fresh thyme leaves and a drizzle of olive oil.
Breakfast Hummus Bowl: Top hummus with sliced hardboiled egg, sliced banana, diced apple, raisins and crumbled crispy bacon. Garnish with chopped walnuts and a drizzle of maple syrup.
Dessert Hummus Bowl: Add two tablespoons of powdered cocoa and one tablespoon maple syrup to My Favorite Hummus recipe. Top the hummus with sliced bananas, sliced strawberries, fresh pineapple chunks, diced pear, diced apple, fresh blueberries, halved Bing cherries and diced mango. Garnish with a drizzle of maple or chocolate syrup, chocolate shavings, and finely diced walnuts.
Makes one hummus bowl. Multiply for more bowls. Offer with warmed pita bread or flatbreads for dipping.

Variations: Mix and match your favorite ingredients for a tasty bowl. If you are vegetarian, omit the meat/fish and cheese and eggs if you don’t eat eggs or cheese. WFPB or vegan followers can omit the eggs, cheese, and meat/fish. If you are following WFPBNO, do the same as the WFPB and vegans, and omit the olive oil as well.
