Lime Cilantro Dressing – For a Festive Taco Salad

Lime Cilantro Dressing is slightly sweet and works well on my Festive Chicken Taco Salad or perhaps a nice salad of Spring light greens. Also use it as a marinade for grilled chicken or fish. I’ve even used it to dress a fresh pineapple, strawberry, and orange salad as a side for a brunch buffet (omit the garlic from the dressing).

From the kitchen of A Food Lover’s Delight….

Lime Cilantro Dressing

Ingredients:

4 T fresh lime juice (do not use the bottled kind — it’s not the same)
1 T honey or maple syrup
3 T olive oil
4 T vegetable oil
2 T fresh cilantro, finely minced
1 clove garlic, finely minced
1/2 t ground cumin
1/2 t crushed red chili pepper
Salt and pepper, to taste

Method:

Combine all ingredients in a small bowl and whisk until well-blended.

Makes about 1 cup Lime Cilantro Dressing. Use immediately or refrigerate for up to a week.
